Chocolate Brownies

A long time ago I was really into making the best brownies I could. Well after looking at many recipes and trying all sorts of different things I sort of combined a few things from one recipe and some of another and presto - new recipe for brownies. I hope you give them a try they are very good with a cold glass of milk right from the oven. YUM!  I've never frosted them but a basic chocolate frosting would be appropriate if you really need the extra chocolate.

3/4 Cup All Purpose Flour (use 1 cup if you like them cake like!)
1/4 Teaspoon Baking Soda
3/4 Cup Granulated Sugar
1/3 Cup Butter
2 Tablespoons Water
1 Package (12 ounces) Semisweet Chocolate Morsels (or use bittersweet/plain chocolate and forget the chips if you want a more intense chocolate taste)
1 1/2 Teaspoons Vanilla Extract
2 Large Eggs
1/2 Cup Chopped Pecans or Walnuts (use more if you really like them!)

1. Preheat oven to 325 degrees. Grease a 9-inch square-baking pan.  Place nuts on baking tray and allow them to toast slightly for 7-10 minutes. Trust me they will taste better than throwing them in raw!

2. In a small bowl, mix together flour and baking soda.

3. In a small saucepan, combine sugar, butter, and water. Bring to a boil over medium heat; remove immediately from heat.

4. Stir in 1 cup (8 ounces or 225 grams) of chocolate morsels and vanilla extract until chocolate is melted and mixture is smooth.

5. Transfer mixture to a medium bowl. Cool completely.

6. Stir in eggs, 1 at a time, beating well after each addition. Gradually stir in flour mixture until smooth.

7. Stir remaining chocolate morsels and nuts into batter. Pour batter into prepared pan.

8. Bake until a toothpick inserted in center comes out clean, 30 to 35  minutes. Transfer pan to a wire rack to cool completely. Cut into squares.

If you want you can easily double this recipe - it works out just as well.  You might have to bake it for a tad bit longer but not by much I've found.

Metric/Ounces Equivalents:

340 grams/12 ounces Chocolate
60 grams/2 ounces Pecans

Revised: 05 July 2004.
